Cauliflower & Coriander Fritters with Herb Salad

Ingredients

    1/2 head cauliflower, cut into small florets
    1 tsp ground coriander
    1 tsp ground sumac
    1 Tbl olive oil
    65ml milk
    2 eggs
    3/4 cup self-raising flour
    1/2 red onion, diced
    1/2 cup coriander, chopped
    100g haloumi, grated
    1 cucumber, sliced into ribbons
    1 cup mixed herbs (parsley, mint, coriander, dill)
    1 bunch spring onions, sliced
    1 Tbl white wine vinegar

Directions

Preheat oven to 160C. Mix cauliflower with the ground coriander, sumac and olive oil and season well. Spread onto a baking tray and roast in the oven for 10 minutes or until tender. (I like a little golden colour on the cauliflower). Cool.

Beat eggs and flour together, then add cauliflower, red onion, coriander and haloumi. Season.

Heat a frying pan over medium heat and coat with oil spray . When hot drop in spoonfuls of the batter. Cook fritters on both sides until golden and cooked through. You may need to do this in two batches.

Meanwhile prepare the herb salad. Combine cucumber ribbons, herbs and spring onions with the vinegar and freshly ground black pepper.

Serve the fritters warm with the salad and, perhaps, some smoked fish.
