Introduction

I've never made traditional stuffed peppers before. This is an adaptation of my husband's mother's stuffed pepper recipe. I chose to use bison because it's leaner and has better nutrients. And Rotel tomatoes for some spice. I've never made traditional stuffed peppers before. This is an adaptation of my husband's mother's stuffed pepper recipe. I chose to use bison because it's leaner and has better nutrients. And Rotel tomatoes for some spice.
Number of Servings: 6

Ingredients

    6 lg red peppers
    1 lb ground bison
    2 cups brown rice, cooked
    1 can Rotel tomatoes
    3 cloves garlic
    1 (15 oz) can tomato sauce

Directions

Cut tops off peppers and remove seeds and membranes. Chop tops. Cooke bison, garlic and pepper tops until meat is browned. Drain meat and mix with cooked rice and tomatoes. Stuff peppers and place in baking pan. Pour tomato sauce evenly over peppers. Cover and bake at 400 for 45 minutes. (optional: sprinkle with shredded cheese and return, uncovered, to oven until cheese is melted - not included in calories).
