Mocha Oat Mini-Muffins

Introduction

A little cocoa goes a long way in this brunch-worthy treat. A little cocoa goes a long way in this brunch-worthy treat.
Number of Servings: 44

Ingredients

    1.25 cups whole wheat flour
    .75 cup rolled oats
    1/3 cup dark/dutch cocoa powder
    1 tbsp baking powder
    1 packet Starbucks Via coffee granules (can use more for more coffee flavor, or less to omit it)
    .5 cup coconut oil (can substitute melted margarine or other oil)
    3 egg whites
    1 tsp vanilla extract
    1 cup light soy milk

Directions

Preheat oven to 400 degrees F.

Mix dry ingredients in a large bowl and set aside.

Combine all wet ingredients in a small bowl and incorporate into the dry ingredients.

Spray a mini-muffin pan with non-stick spray and fill the wells 3/4 full. Bake for 10 minutes or until toothpick comes out clean. Remove muffins from pan and let cool on a wire rack.

Makes approximately 44 mini-muffins.

Note: If you want to make regular-sized muffins, increase cooking time to 15 minutes or until toothpick comes out clean.
