Sweet n' Spicy Fried Rice

Introduction

I came up with this recipe after puzzling over random ingredients in the kitchen and not finding a recipe that could tie them all together. :) The results were fantastic! It's great when served with teriyaki or sweet and sour chicken! Number of Servings: 1

Ingredients

    1/2 cup brown rice, uncooked
    1/2 orange bell pepper, diced
    1/2 cup sliced fresh mushrooms
    1/4 cup diced onion
    1 Tbsp. brown sugar, not packed
    1 tsp. Worcestershire sauce
    2 Tbsp. water
    Dash salt
    Dash black pepper
    Dash cayenne pepper

Directions

1. Cook rice according to package directions. Set aside.

2. In a skillet coated with nonstick cooking spray, cook mushrooms, onions, and bell pepper until almost tender. Add
Worcestershire sauce and brown sugar and cook for about a minute more.

3. Add water and stir in salt, pepper, and cayenne pepper.

4. Finally, stir in the cooked rice. Cook for 1-2 minutes or until rice is coated and slightly sticky.

Makes 1 serving.
