Pork and Pineapple Tacos

Ingredients

1 white onion, coarsely chopped
1 can (20 oz.) pineapple tidbits, drained
1 pound pork tenderloin, trimmed and thinly sliced
2 teaspoons fajita seasoning, divided
4-6 La Tortilla Factory Low Carb High Fiber tortillas, warmed
1/2 cup roughly chopped fresh cilantro
lime wedges (optional)
fresh salsa (optional)
Directions
Place rack in oven about 6 inches below burner and preheat broiler.
Arrange onion and pineapple on a large foil-lined baking pan and broil, stirring once or twice, until softened and beginning to brown, 6 to 8 minutes.
Sprinkle with 1 teaspoon fajita seasoning.
Transfer to a serving bowl (large enough for all ingredients) and keep warm.
Arrange pork in a single layer on the same baking sheet and broil, stirring once or twice, until cooked through and golden brown, 6 to 8 minutes.
Sprinkle with remaining teaspoon fajita seasoning.
Add pork to pineapple and onion mixture and toss gently.
Spoon onto warm tortillas, sprinkle with cilantro and serve with lime wedges and fresh salsa on the side.
