Number of Servings: 4

Ingredients

    1 tbsp olive oil
    large zucchini, sliced
    1/2 cup grated parmesan cheese
    salt and pepper to taste

Directions

Saute zucchini in olive oil until soft. Top with parmesan and let melt. Season with salt and pepper, and enjoy!

  • Yum! I could eat that all on my own! To be honest I usually fry my courgette in butter with garlic, but this will probably be a little less calorific, so I'll give it a go tomorrow. I have the ingredients in the house as luck would have it. :-) - 7/18/10
