Warm Quiona Salad

Introduction

This is a perfect side item for any daytime meal. Also tastes good topped on salad greens. This is a perfect side item for any daytime meal. Also tastes good topped on salad greens.
Number of Servings: 4

Ingredients

    1 cup quiona
    1 cup zucchini (chopped)
    1/2 cup carrots (grated)
    1 cup sweet bell pepper (chopped)
    1/2 red onion (chopped)
    1 cup tomato (diced)
    1 tbsp olive oil
    2 tbsp unsalted butter

Directions

Chop and grate all your veggies, or buy them pre-cut at your grocery store :)
In a saucepan take 1 cup of dry quiona and 1 cup of water(or broth) and cook according to instructions (usually until the liquid has been absorbed).
In a large skillet heat oil and butter together till butter has melted (med-high heat). Add all of your veggies and saute'. Cook until tender. Then once the Quiona is cooked, add it to the pan and mix and let stand in the skillet till juices are mostly absorbed. Salt and pepper to taste.

If you're vegan, then just dont' use butter and add another tbsp of olive oil. :)
