Introduction

Ingredients

    1 whole wheat tortilla
    1 small tomato, diced
    1/2 cup red, yellow, and green bell peppers, diced
    25g edam cheese
    20g sharp cheddar cheese

Directions

Spray a frying pan with non-stick cooking spray. Place tortilla on pan. Sprinkle about half the cheese on one half of the tortilla. Add tomato and bell peppers, then the remaining cheese. Fold over the other half of the tortilla and heat until cheese is melted. Flip if desired. If there are leftover tomatoes and peppers, serve them on the side with 2 tbsp low-fat taco flavored dip or sour cream.
