Chewy Chocolate Espresso Cookies - Ma's

Introduction

Ingredients

    3 1/4 cups Nestle Toll House Semi Sweet Chocolate Chip Morsels
    1/2 cup Butter
    1/2 cup All Purpose Unbleached King Arthur Flour
    1/2 tsp Baking Powder
    1/2 tsp Kosher Salt
    4 large Eggs
    1 1/2 cups Granulated Sugar
    1 1/2 tsp instant espresso
    1 1/2 cups Nestle Toll House Semi Sweet Chocolate Chip Morsels

Directions

1. In a bowl over simmering water, melt the 3 1/4 cups chocolate chips and butter together.
2. Meanwhile, in another bowl, mix together the flour, baking powder, and salt.
3. In a mixer with a whip attachment, mix the eggs and sugar until light and fluffy. Add the vanilla and ground espresso, then add the chocolate mixture. Mix in the dry ingredients and the remaining 1 1/2 cups chocolate chips. Let sit at room temperature for 30 minutes to set up.
4. Scoop onto parchment lined sheet pans with a spoon and then freeze. Bake from frozen stage in a preheated 375 degree oven for 7 minutes. You can par-bake them for 5 minutes then bake an additional 2 minutes at the time you serve them so they're warm. The centers will be soft.
5. Will yield about 60 cookies, depending on size.


Hints - After letting sit for 30 minutes I baked what I put onto the sheet pans. The rest are spooned out and froze as individual cookes on a sheet pan.

Baked in a 360 degree convection oven for 10-12 minutes. If no convection oven back at 375 degrees. Keep center soft.
