Ingredients

- Canola oil spray
- 1 egg, plus one egg white
- Splash of milk (Approx. 1 tbsp)
- 2 button mushrooms, sliced
- A few leaves of spinach, chopped
- 1 medium scallion, cut into 1 inch pieces
- Light sprinkle of cheese (Approx. 1 tbsp)
- Salt and pepper, to taste
Directions
Whisk together one egg, one egg white, and a splash of milk; set aside.
Add canola oil spray to a pan over medium heat. Add mushrooms, scallions, and spinach. Saute for approximately 2 minutes, or until the vegetables are soft. Add the egg mixture and stir frequently for approximately two minutes. When the eggs are almost scrambled to your liking, add a sprinkle of cheese and stir; cook for another minute. Season with salt and pepper, to taste.
