    1 15 OZ. PINEAPPLE CHUNKS,DRAINED
    1 1/2 LB. RAW SHRIMP
    1 MED. RED PEPPER,CHOPPED
    1 SM. JALEPENO,SEEDED & CHOPPED FINELY
    1 TBL. GINGER
    1 TBL. SEAFOOD SEASONING
    1/2 CUP LITE SMART BALANCE
    1/4 CUP PACKED BROWN SUGAR
    1 1/2 TBL. LEMON JUICE
    2 CUPS COOKED BROWN RICE

Directions

CENTER 1/4 PINEAPPLE CHUNKS ON EACH FOIL SHEET,THEN ARRANGE SHRIMP IN EVEN LAYER OVER PINEAPPLE. COMBINE PEPPERS,GINGER AND SEASONING,SPRINKLE OVER SHRIMP,TOP WITH SMART BALANCE,BROWN SUGAR AND LEMON JUICE. PLACE ON GRILL AND COOK 8 TO 10 MINUTES. MAKES 4 SERVINGS.
