4 large carrots, washed and top layer peeled 1 clove garlic, minced Salt & Pepper, to taste
Fill a 3 quart sauce pan half way with water, salt, garlic and bring to a boil. After washing and peeling the top outside layer of the carrot, take the vegetable peeler and push a little deeper making a thicker carrot peel. Take the carrot ribbon strips and drop them in the boiling water and boil for 7 to 10 minutes or until tender. Drain and season to taste.
