Chicken Napoli

Number of Servings: 8

Ingredients

    4 chicken breast halves, cut into pieces and sprinkled with 1 t. Tony Chachere's creole seasoning
    1/4 c. flour
    1/2 t. salt
    1/8 t. pepper
    3 T. parmesan cheese
    1 c. chicken broth (or bouillon and water)
    can mushrooms, drained
    zucchini (4-5 cut thin)

Directions

Combine flour, salt, pepper, and parmesan cheese in a Ziploc bag and shake chicken in this mixture to coat. Place coated chicken in Crockpot. Pour chicken broth over chicken. Cook on low 5-6 hours until tender (stir after 2-3 hours). Add zucchini and mushrooms the last half hour. Serve over whole wheat rotini pasta. Makes 8 servings, 3 points each.
