Zucchini Brownies

Sub applesause for oil
Use 1 cup each wheat and white flour

    1/2 c. applesauce
    1 1/4 c. white sugar
    2 tsp. vanilla extract
    1 c. wheat flour
    1 c. white flour
    1/2 c. unsweetened cocoa powder
    1 1/2 tsp. baking soda
    1 tsp. salt
    2 c. shredded zucchini


Preheat oven to 350 degrees. Spray 9x13 baking pan with cooking spray.
In a large bowl, bix together applesauce, sugar and vanilla until well blended. Combine the flour, cocoa, baking soda and salt; stir into the sugar mixture. Fold in zucchini.
Spread evenly into prepared pan and bake for 25-30 minutes until brownies spring back when gently tourched.
