Veggie Omelet

Ingredients

    Saute in the Olive oil
    Extra Virgin Olive Oil, 1 tbsp (remove)

    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Mushrooms, fresh, 1 cup, pieces or slices (remove)
    Green Peppers (bell peppers), 1 cup, chopped (remove)

    Add:
    Oregano, ground, 1 tsp (remove)
    Zucchini, 3 cup, sliced (remove)
    Red Ripe Tomatoes, 1 cup, chopped or sliced (remove)
    Pepper, black, 1 dash (remove)

    Omelets
    Egg white, 8 serving (remove)
    Water, tap, .5 cup (8 fl oz) (remove)
    Cream Of Tartar, 0.5 tsp (remove)

Directions

In a large skillet saute chopped onion, bell pepper and mushrooms in olive oil.

Add:
chopped zucchini
tomato
oregano
salt and pepper optional

Beat egg whites and cream of tartar until stiff.
Divide into 4 - 9" greased pie pans or baking dishes.
Bake 350 for 12-15 min or until knife comes out clean
Divide filling onto omelets, covering half
Sprinkle cheese (optional)
Cut partway and fold over.
makes 4 omelets
