Homemade Spaghetti Sauce

Ingredients

Zucchini, .5 cup, diced (1/2 medium, diced)
Onions, raw, .5 cup, chopped
Mushrooms, fresh, 2 medium, diced
Green Peppers (bell peppers), 0.25 cup, chopped
10 Tomatoes, peeled and seeded
Mrs. Dash Tomato Basil Garlic salt-free seasoning, 0.5 tsp
,Ground Cumin .25 tsp
Tomato Paste, 6oz can
Tomato Sauce, no salt added, 8oz can
Directions
Boil tomatoes, then place immediately in ice water. Peel, cap, and slice in half, removing seeds. Set aside.
Dice veggies. Heat in skillet over medium heat (I use a little water to prevent sticking, but you can use oil if desired)- first put in onions and peppers, then add zucchini and mushrooms, then add tomatoes (chop with the spatula)
Continue to heat over medium heat. Add seasonings to taste. Add tomato paste to thicken and heat through. Sometimes I add tomato sauce, sometimes I don't depending on what I am using it for and how thick or thin I want it. Total heating time, about 30 minutes
