Ingredients

    Chicken Breast, no skin, 16 ounces
    Swanson Chicken Broth 99% Fat Free, 1.5 cup
    Lime Juice, 1 lime yields
    Lime zest
    *Peanut Oil, 1.5 tbsp
    Salt, .5 tsp
    Pepper, black, .25 tsp
    Garlic, 3 cloves
    Ginger Root, 1.5 tsp
    Broccoli, fresh, 5 cup, chopped
    *Hoisin Sauce, 5 tbsp

    Cashew Nuts, dry roasted, 1 cup, halves and whole (not included in NI)

Directions

dice garlic, ginger and chicken.

heat oil in pan, saute garlic & ginger for a minute, then add chicken, season with s&p. brown chicken on all sides, add broccoli and saute for 5 more minutes.

add chicken broth, hoisin, lime juice & zest. cook for aboout 10 minutes, until chicken is cooked through and sauce has thickend.

top with cashews, serve over brown rice.
