Ingredients

3 large Yellow Squash
2 cups (or more if you wish) sliced fresh mushrooms
2 tbsp olive oil
3 tsp garlic powder or fresh garlic
Directions
Slice your squash into fairly thin slices. Heat the olive oil in a non-stick frying pan on medium-high.
Add the squash and mushrooms, then sprinkle with garlic.
Cover and let cook for about 4-5 minutes. Remove the cover; squash and mushrooms should be a little soft.
Continue to cook, uncovered, until the squash is slightly brown on one side.
Serve right away.
I have tried other variations with chicken and sliced onions and that is awesome, too!
