Spinach Egg White Frittata

Introduction

A fabulous dish that can be made ahead of time for healthy breakfasts all week long. You can add any veggies you like! A fabulous dish that can be made ahead of time for healthy breakfasts all week long. You can add any veggies you like!

Ingredients

    egg whites, chopped spinach, tomatoes, mushrooms, parmesan cheese , garlic, salt and pepper

Directions

Pre-heat oven to 400, cut tomatoes and mushrooms. Drain spinach throughly. Combine egg whites, eggs, spinach, mushroomas, tomatoes, salt, pepper and garlic in a medium size bowl. Coat baking dish with olive oil or Pam. Pour mixture into baking dish and bake for 30 minutes, check the middle to determine if its done. After frittata is done, remove from oven and sprinkle with parmesan cheese. Enjoy!
