Citrus- Ginger Chicken

Introduction

Number of Servings: 4

Ingredients

    .5 c orange juice
    .25 c lime juice
    2 TBS honey
    1 tea ginger root
    1 tea thyme ( I used dried you can use fresh if you want)
    1 pound chicken breasts
    1 TBS butter
    salt and pepper

Directions

1. Mix the orange juice, lime juice , honey and ginger root and thyme in medium bowl
2. Spraty non stick skillet with Pam and heat over medium-high heat. Sprinkle salt and pepper on chicken then put in skillet.
3. Brown chicken on each side ( about 3 to 4 minutes). Then stir in orange juice mixture. Heat to boiling and then reduce heat.
4. Cover and cook for about 8 to 10 min or until the chicken is no longer pink in the middle.. Remove the chicken from the skillet.
5. Heat the sauce in skillet to boiling. Add butter and cook stirring constantly until butter is melted and sauce is slightly thicken. Serve over the chicken. Can add orange slices, but I didn't include in the calculations.
