Whole wheat bread

Ingredients

    1 - 1 1/4 cups water
    1/4 cup cannola or olive oil
    1/4 cup honey, molasses or maple syrup
    3 1/2 cups 100% whole wheat flour
    2 1/2 teaspoons instant yeast
    1/4 cup nonfat dry milk
    1 1/4 teaspoons salt

Directions

Combine all ingredients and blend well until dough starts to leave the sides of the bowl. Knead until smooth. (I use my mixer with a dough hook). May need to add more flour if too sticky or water if too dry. Transfer to a bowl sprayed with Pam and turn dough until lightly coated. Cover with Saran wrap and let rise for 1-2 hours, until puffy, but not necessarily double. Shape into loat and place in greased pan. Cover lightly with Saran Wrap and let rise again for 1-2 hours, or until center is about an inch above the pan (this depends on the size loaf pan you use). Bake at 350 degrees F for about 35 minutes. After 20 minutes, tent with aluminum foil to prevent over-browning. Remove from oven when done and turn out of pan on a rack. While still hot, may spray lightly with Pam for a softer crust. Store in plastic bag at room temp.
