Krab al fredo

Ingredients

    4x1 cup servings cooked pasta shells
    2 tbsp butter
    2 tbsp flour
    2 cups non-fat milk
    1/4 tsp black pepper
    1 tsp prepared crushed garlic, or 3 whole raw garlic cloves, crushed
    1 tsp dried parsley (Optional)
    1/2 cup grated parmesan cheese
    12 oz surimi, chopped

Directions

Prepare pasta shells according to package directions, but do not add salt.
While it is cooking, melt butter in bottom of a shallow saucepan. Add flour to make a rue, stirring until smooth and thick. Add milk, stirring constantly. A wire whisk may help to keep lumps from forming. When sauce starts to thicken, black pepper, prepared crushed garlic (or fresh cloves, crushed) and dried parsley. The parsley is optional.
Drain pasta.
Add parmesan cheese to sauce, stirring until blended, then add 12 oz surimi.
Plate pasta, spoon sauce over it. Sprinkle with additional parmesan if desired, use fresh parsley for garnish.
Makes four 1 cup servings.
