4x1 cup servings cooked pasta shells
2 tbsp butter
2 tbsp flour
2 cups non-fat milk
1 dash salt
1/4 tsp black pepper
1 tsp prepared crushed garlic, or 3 whole raw garlic cloves, crushed
1 tsp dried parsley (Optional)
1/2 cup grated parmesan cheese
12 oz surimi, chopped
While it is cooking, melt 2 tbsp butter in bottom of a shallow saucepan. Add 2 tbsp flour to make a rue, stirring until smooth and thick. Add 2 cups non-fat milk, stirring constantly. A wire wisk may help to keep lumps from forming. When sauce starts to thicken, add a dash of salt, 1/4 tsp black pepper, 1 tsp prepared crushed garlic (or three fresh cloves, crushed) and 1 tsp dried parsley. The parsley is optional.
Add 1/2 cup parmesan cheese to sauce, stirring until blended, then add 12 oz surimi.
Plate pasta, spoon sauce over it. Sprinkle with additional parmesan if desired, use fresh parsley for garnish.
Makes four 1 cup servings.
