Introduction

Rice salad to enhance any fish, chicken, pork or beef meal for hot summer days. Rice salad to enhance any fish, chicken, pork or beef meal for hot summer days.
Number of Servings: 6

Ingredients

    1 cup raw rice - cooked and cooled or use leftover rice
    1 sm. can mushrooms or raw mushrooms (optional)
    1/4 cucumber cubed (optional)
    1/4 cup peas straight out the garden (optional)
    10-15 black olives sliced (optional)
    *can use any veggie combo you like*
    black pepper to taste
    1/3 cup virgin olive oil
    1/3 cup balsamic vinegar (more or less to taste)



Directions

Cook rice as directed - cool rice. Mix and refrigerate until you serve.

Makes 6 1 cup servings
