Curried Quinoa Salad with MangoSubmitted by: FRUITBOT

2 cups (dry) quinoa, cooked and fluffed
1/2 cup virgin olive oil
4 tbsp. lime juice
2 tbsp. hot mango chutney
1 tbsp. curry powder
1 tsp. dry mustard
salt to taste
2 mangos, cleaned and chopped ( 2 cups)
2 large English cukumber, with peel, chopped ( 4 cups)
1 red bell pepper, chopped ( 1 cup)
6 green onions, chopped ( 1 cup )
Combine next 5 ingredients ( oil, lime juice, chutney, curry powder, dry mustard ) and whisk.
Chop up all the vegetables. Toss in 1/2 of the dressing.
When the quinoa is done, let it cool a but and fluff it with a fork, then add to vegetable mixture, and mix in remaining dressing.
By my calculations, this makes 14 one cup servings.
