T's - Cucumber Cream Cheese Summer Dip (1/4 cup)

Introduction

Use this for dipping cucumbers, tomatoes, peppers, celery, etc. (I have had people eat this with tostitos and whole grain crackers as well.) Use this for dipping cucumbers, tomatoes, peppers, celery, etc. (I have had people eat this with tostitos and whole grain crackers as well.)
Number of Servings: 16

Ingredients

    2 blocks (8 ounces) *Philadelphia Cream Cheese - you can use low fat or fat free
    2 1/4 cups Cucumber pared, chopped
    1/2 cup filled Dill weed, fresh
    1 Tblsp *Lemon Juice, (fresh)
    1/4 tsp Kosher Salt

Directions

Should make about 16 or more 1/4 cup servings.

Blend the cream cheese, dill weed, lemon juice and salt in a food processor.

Hand stir in the peeled and chopped cucumber. (Hint if you are using large cucumbers remove the seeds in the middle as they can be unpleasant tasting when so large.)

I tend to us small cucumber that we also use for canning/pickling.
