Ingredients

    3 egg whiles
    1 whole egg
    1/2 cup chopped onions
    1 large baking potato
    salt and pepper to taste

Directions

peel potatoe and cut into small cubes. heat olive oil in small frying pan. add potatoes and chopped onion and cook over medium heat until potatoes and onions are cooked. meanwhile in separate bowl mix egg whites and whole egg. beat with whisk until well blended.
pour egg mixtures into potatoe/onion mixture. make sure egg mixture covers the entire pan.
turn heat to low and cover. when eggs are solid turn off heat. place a plate over top of pan, and turn upside down. tortilla will be brown on top.
cover andlet cool. flavors blend well in a few hours. serves 3
