Doug's Mac and Cheese

Introduction

Definitely NOT low calorie, but delicious! Definitely NOT low calorie, but delicious!
Number of Servings: 12

Ingredients

    1lb elbow macaroni
    %tbsp butter
    6tbsp flour
    1 tsp salt
    1 1/2 tsp dry mustard
    2 1/2 tsp cayenne pepper (optional)
    5 c. milk
    8oz Monterey Jack cheese
    8oz sharp cheddar cheese
    6 slices white bread
    3tbsp butter (cold)

Directions

Cook macaroni noodles. Melt butter to foaming and add salt, flour, mustard and cayenne. Whisk 1min until color deepens and add milk. Reduce heat and whisk in cheese and 1tbsp salt until melted. Add drained macaroniand cook over medium heat until steaming. Add to 13x9 and cover with topping. Broil until crumbs are golden brown, rotating if necessary. Cool for 5min.

To prepare copping, very lightly toast bread. Crumble slightly and mix with butter in food processor.
