Veggie Couscous

Introduction

Need to get rid of some fresh veggies? This is the dish for you, you can pretty much throw in anything you like and it will turn out tasting fabulous! Need to get rid of some fresh veggies? This is the dish for you, you can pretty much throw in anything you like and it will turn out tasting fabulous!
Number of Servings: 4

Ingredients

    4 almonds, sliced or chopped
    1/2c onion, chopped
    2 garlic cloves, chopped
    1/4c bell pepper, chopped

    1/2c squash, quartered
    1/2c zucchini, quartered
    1/2c tomatoes, diced or chopped (I used canned, they weren't ready from my garden)

    1 tbsp olive oil
    1c chicken broth, I use 99% fat free/ow sodium
    1c couscous, uncooked

Directions

Makes 2-4 servings

In a large sauce pan add olive oil and heat over medium heat. Once oil is hot add almonds, cook until brown, add onion, bell pepper and garlic, cook until soft. Add squash, zucchini, and tomatoes cook until warm. Push ingredients to side of pan to form area in middle. Pour in the couscous and chicken broth. Stir gently to combine all ingredients. Remove from heat and allow to stand for about 3 minutes. Stir/fluff before serving. Salt, pepper or flavor to taste!
