Ingredients

    1 can Roland Lite Coconut Milk
    Aroy D Green Curry Paste, 1 serving
    Chicken Breast, no skin, 16 ounces
    Green Peppers (bell peppers), 1 cup, strips
    *Peppers, sweet, red, fresh, 0.5 cup, chopped

Directions

Stir 2 Tbsp of olive oil and 4 1/2 Tbsp of curry paste.
Pour in 2 Cups of coconut milk, then add chicken.
Add vegetables and simmer about 20 minutes.
