Zucchini Boats!

Introduction

Ingredients

    1 Medium Zucchini - cut into 3 sections and split lengthwise
    1 Medium Onion - chopped
    1/4 cup Italian bread crumbs
    2 TB reduced fat grated parmesan cheese
    Parkay spray margarine
    herbs of your choice

Directions

Preheat oven to 350 degrees. Prepare a baking dish by spraying with non stick cooking spray.

Take 1 medium size zucchini and cut in 3 pieces then cut lengthwise. Scoop out the "meat" and leave a "boat". Spray each "boat' with Parkay spray margarine and place in the baking dish.

Take the "meat" (insides) of the zucchini and chop in food processor until roughly chopped. Also chop your onion. Put these in a small mixing bowl. Add the bread crumbs, and parmesan cheese and herbs you like. I put in Italian Herbs. Mix together well and using a small scooper fill each "boat" with the mixture. Spray all over with the Parkay spray margarine.

Cover with foil and bake 15 minutes - take off foil and bake an additional 5 minutes.
