My flaxseed oat bran muffins

Introduction

Number of Servings: 22

Ingredients

    1 1/2 cups whole wheat flour
    3/4 cup ground flaxseed (flaxseed meal)
    3/4 cup oat bran
    1/3 - 3/4 cup brown sugar, depending on how sweet you want them
    2 tsp baking soda
    1 tsp baking powder
    1 1/4 tsp salt
    1 1/2 tsp ground cinnamon
    1 1/2 cups shredded carrots
    2 peeled and shredded apples
    1/2 raisins (optional)
    1 cup chopped nuts (optional)
    3/4 non-fat milk
    1/2 cup liquid egg beaters (or 2 large eggs)
    1 tsp vanilla extract



Directions

Mix together in large bowl:
ground flaxseed
oat bran
brown sugar
baking soda
baking powder
salt
cinammon

Stir in:
carrots
apples
raisins
nuts

Combine in smaller bowl:
milk
beaten eggs
vanilla

Pour liquid ingredients into dry ingredients. Mix until moistened, but do not over mix.

Use a 1/4 scoop to measure, and pour into muffin tins sprayed with Pam.

Bake at 350 degrees F for 15-20 mins.
