Hearty Fruit & Nut Overnight Oatmeal

Introduction

This is a great dish for night before rush mornings, as the crock pot does all the work while you're sleeping. Also great for cold mornings, and the fruit sweetens it as it cooks so no added sugar is ever needed (not to say I won't sometimes add a little maple syrup to the final bowl). (Note this can also be made stove top method, you just don't have the benefit of it cooking while you sleep.)

This dish may be calorie heavy but when you pair it with a little milk (or cream), it will* keep you full until lunch or later. If you want to lighten it drop either the apples or the raisins, or take a smaller serving.

Number of Servings: 8

Ingredients

    3 Fresh Apples, cored and chopped (I leave on the skin)
    1 1/2 cups Raisins (not packed)
    6 ounces (1 1/2 cups) Walnuts, chopped
    1 1/2 tsp Ground Cinnamon(feel free to add other favorite
    spices instead of or with the cinnamon)
    6 cups Water (can add more if you want)
    3 cups Rolled Oats (If you prefer stone cut oats then just
    adjust the water accordingly)

Directions

Makes 8 (or more) 1 cup servings

Add water to a Large crock pot and turn on to low. From here out there is no wrong order of adding ingredients.
Core and chop apples, add them to the pot. Add cinnamon. Add raisins, add walnuts, and last but not least add oats. Stir everything thoroughly. Cover pot with lid, feel sides make sure it's warmed up. Walk away.

Oh ok, stir again if you must right before you go to bed. :)
