Clove spice chicken

Introduction

Delicious West African recipe I learned from a friend. Chilis can be added to spice it up. Original recipe uses chicken thighs, but I modified this a little to use the leaner breast meat. Serve with Jasmin Rice and salad or cooked spinach with the sauce spooned over it. Delicious West African recipe I learned from a friend. Chilis can be added to spice it up. Ingredients

    1 full Chicken Breast with bone and skin (both halves)
    1.5 T Canola Oil
    4 cloves garlic
    2 whole cloves or 1/2 t ground cloves
    1 medium onion chopped
    4 t ground tumeric
    1 cup chopped fresh tomatoes
    1 t chopped fresh thyme
    1 T agave syrup

Directions

- Using a mortar and pestle grind together the garlic and cloves (or use the side of a knife). Set aside.
- Coat a deep frying pan with the oil and on high heat brown the chicken on all sides (about 3 minutes).
- Add the onions, cover and let cook down (about 7 minutes).
- Remove the chicken to a plate.
- Add the tumeric and garlic mixture. Stir into the mixture until fragrant.
- Add the tomatoes and thyme and water.
- Put the chicken back in with the mixture, cover and lower heat. Cook for 15 minutes.
- Add the agave syrup, turn the chicken and cook covered for another 10 minutes (or until breast is cooked through).

Serves 2 large portions or 4 medium portions (if serving with rice). Calories are calculated for the medium portion.

**My husband likes this served with rice cooked with slivered almonds and raisins to the rice.
