Sausage and Brown Rice Casserole

Introduction

Ingredients

    1 lb. pork sausage
    2 c. cooked brown rice
    1 c. milk
    1 lg. stalk celery
    1 chopped onion
    1 can cream of chicken soup
    3 oz. shredded mozzarella cheese

Directions

Cook and stir pork sausage in Dutch oven until brown; drain. Stir in rice, milk, celery, green pepper, onion, soup and mushrooms. Pour into ungreased 2 quart casserole; sprinkle with cheese. Bake uncovered in 350 degree oven until center is bubbly, about 45 minutes. 6 servings.

  • I think the calories for this is wrong. It's calculated using 1/3 of a sausage link per serving (6 servings comes out to 2 links) 2 links do not equal 1 lb of sausage in my book. I ended up using 1/2 lb of sausage and we loved it! will have to recalculate for proper calories. - 12/27/11

  • This was a delicious, quick and easy recipe which my family absolutely loved. To make it even easier (and since I was short on the noted ingredients), I omitted the celery and onion and substituted cream of celery for cream of chicken. It was fanatastic. Will def be making this 1 again :) - 1/3/11
