Tortellini with Vegetables

Introduction

Sweet vegetables compliment the cheese filled pasta and tangy garlic in this recipe. Sweet vegetables compliment the cheese filled pasta and tangy garlic in this recipe.

Ingredients

    • 1 medium red pepper, sliced
    • 1 medium green pepper, sliced
    • 1 medium orange or yellow sweet pepper, sliced
    • 1 cup snow peas, sugar snap peas, or green beans
    • 1 large tomato, quartered
    • 2 tablespoons olive oil
    • 1 medium onion, chopped
    • 3 garlic cloves, chopped
    • 5 or 6 fresh basil leaves, shredded
    • salt and pepper to taste
    • 2 cups dried cheese tortellini
    • 1/2 cup grated parmesan cheese

Directions

1. Cook tortellini as directed by the package.



2. Heat oil in a medium sized sauté pan. Add onion, cook until translucent. Add garlic, peppers, basil. and beans. Continue to cook until peppers become slightly soft.



3. Toss vegetables with drained pasta. Top with parmesan cheese.



Serves 4.

    This is just my kind of pasta recipe! I sometimes like to add sliced black olives or/and artichoke hearts (canned) Mmmmh... QUE BUONO!!! Thanks for sharing! :-)

    BETHPROVERBS31 - I believe the tomato is included in VEGETABLES that have to be tossed with drained pasta - #3 in instructions... LOL - 11/3/08

    This was awesome! I forgot to by green beans and basil, but it was still VERY GOOD! I bought a nice parmesan cheese from the gourmet deli good. Very nice with a glass of Chardonay. Loved it! - 5/8/09

    Tortellini is one of my favorites and it worked great to add the veggies. Is hard to keep portion size small and is a bit high in calories so I wont make often but its a great way to make a pasta dish with more health value - 11/7/07

  • Delicious - We use frozen tortellini (only takes about 3 min to cook) and a can of diced tomatoes instead of fresh if it is winter. Everyone loves it. I have made this many times and it is one of our family favorites. For the non vegetarian family members, I have turkey italian sausage on the side. - 6/18/10
