Hawaiin Chicken

Introduction

Ingredients

    Chicken Breast
    Pineapple slices
    Teriyaki Sauce
    Brown Rice

Directions

I use a rice cooker and a George Foreman grill for cooking this dish. I double it up and add a salad for a great dinner for my husband and me.

I start by cooking the brown rice - 1 cup uncooked with 2 cups of water and 2 tablespoons of the natural pineapple juice from the can.

While it is cooking, I warm up the George Foreman grill at 350 degrees with a spray of no fat olive oil cooking spray on both sides of the grill.

Once 350 degrees, place chicken breasts on the grill and close - 5 minutes.

Open grill, baste with teriyaki sauce on both sides of chicken breast and close for 4 minutes.

Open add pineapple slice to each chicken breast and baste tops with more teriyaki sauce and close for 2 to 3 minutes.

Chicken is done! Rice should be done too, take one pineapple slice and cut into small bits - add to rice and stir - YUM!

The salad can be really simple with romaine, roma tomatoes, red onion -- you can even add pineapple bits! Just a nice light dressing of olive oil and lemon or apple cider vinegar will do the trick.
