Introduction

I invented this one day will using up leftovers in the fridge I invented this one day will using up leftovers in the fridge
Number of Servings: 8

Ingredients

    2 large shallots sliced thin
    3 large cloves garlic sliced thin
    1 large cubanelle pepper large dice
    1 yellow pepper large dice
    1/2 Cup roasted red pepper large dice
    1 Cup frozen peas thawed
    16 oz cooked chicken diced
    8 oz imitation crab diced
    3 tablespoons fresh tarragon roughly chopped
    3 tablespoons lemon basil roughly chopped
    1/2 Cup white wine

Directions

Spray nonstick pan with cooking spray and lightly saute shallots and garlic until fragrant.
add cubanelle and yellow peppers and cook until tender crisp
add roasted pepper, chicken, and imitation crab and peas and cook until warmed
add white wine and simmer until wine is reduced by half
add herbs and stir well
serve over penne or other pasta or rice hot or cold

optional: if you don't have lemon basil use regular and 1 Tablespoon of fresh lemon juice
