Potato and Leek Soup

Number of Servings: 4

Ingredients

    5 medium potatoes
    1 leek
    Dash of black pepper
    4 cups of vegetable broth
    1 tbsp olive oil

Directions

Heat oil and add leek (finely chopped).
Add potatoes (finely chopped).
Cook until softened.
Add stock.
Simmer for 20 mins.
Add pepper to taste.
