Shrimp Tostadas

Introduction

Easy to make, with a nice balance of cool & spicy, creamy & crunchy! Great for a summer lunch or dinner. Easy to make, with a nice balance of cool & spicy, creamy & crunchy! Great for a summer lunch or dinner.

Ingredients

    8 Tostada shells
    3/4 C Reduced fat shredded cheese
    1 Pound cooked, shelled/deveined shrimp
    4 C finely shredded cabbage
    1 Bunch cilantro, chopped (including some stems is okay)
    4 T Green onion, minced

    Dressing:
    4 T Reduced Fat Caesar dressing
    4 T Light mayonnaise
    Juice of lime
    Sriracha hot chili sauce (to taste)
    Salt and pepper to taste

Directions

Top the 8 tostada shells with cheese and toast on cookie sheet in oven just until cheese is melted. Let cool slightly.

Set aside 8 large shrimp to top the tostadas.
Chop remaining shrimp into about 1/2" pieces and toss with the remaining ingredients. Distribute atop the 8 tostada shells and top each with a reserved shrimp.

Makes 8 generously topped tostadas.

Options:
* Top with sliced or chopped avocado (not included in nutrtion count)
* You could substitute chicken for the shrimp, or black beans for a vegetarian version
* To bring the calorie/fat content down a bit further, substitute lowfat mayo or greek yogurt for the light mayo
* This recipe contains a lot of cilantro, which may be distasteful if you're a cilantro hater (apparently it's genetic). In that case you might try substituting parsley.
* If I happen to have it on hand, I also like to top these with a little Trader Joe's Avocado Salsa Verde. (You could use any salsa verde, but that's my favorite.) (Not included in nutrition count, but at 15 calories for 2T it doesn't add much.)
