Spicy Scallions and Snow Pea's Stir Fried

Ingredients

    Ingredients:

    * Water, tap, .3750 cup (8 fl oz) (remove)
    * *Kikkoman Lite Soy Sauce, 2 tbsp (remove)
    * **Nakano Rice Vinegar, .6666 tbsp (remove)
    * *"Great Value" Cornstarch (1 Tbsp), 1 tbsp (remove)
    * *Granulated Sugar, 1 tbsp (remove)
    * *crushed red pepper, 0.25 tsp (remove)
    * *Jasmine Rice (1 cup cooked), 4 cup (remove)
    * *100% canola oil, 1 tsp (remove)
    * *bay scallops, 16 oz (remove)
    * *Garlic - minced (1 tsp), 1 serving (remove)
    * *fresh ginger 1 tsp=2g, 3 tsp (remove)
    * *Orange Pepper (bell pepper - 3-3/4" long, 3" dia), 186 gram(s) (remove)
    * *Mann's snow peas, 227 gram(s) (remove)
    * *Onion - spring or scallion (including top and bulb), 15 gram(s) (remove)

Directions

1. In a small bowl, whisk together 1/4 cup of the water with soy sauce, vinegar, and cornstarch until evenly blended. Whisk in sugar and red pepper flakes. Set aside.
2. Prepare rice according to package instructions. While rice heats, start the stir-fry.
3. Heat oil in a large nonstick skillet or wok over medium-high heat. Swirl to coat pan. When hot, add scallops. If using sea scallops, cook undisturbed for 3 minutes until golden brown on one side. If using bay scallops, cook for 2 minutes until very lightly browned. Transfer scallops to a plate and cover with foil. Set aside.
4. Add garlic, ginger, bell pepper, snow peas and remaining 2 Tbsp water to the pan. Cook and stir until snow peas become bright green. Rewhisk sauce and add it to the peas along with reserved scallops. The will quickly thicken as it simmers. Toss and stir until vegetables are coated with sauce and scallops are done cooking, about 1 minute.
5. Divide among 4 bowls and garnish with sliced scallions, if desired, Serve with rice.
