I did lower the amount of oil and change rosemary to thyme simply because I was out of rosemary. Enjoy!

I did lower the amount of oil and change rosemary to thyme simply because I was out of rosemary. Enjoy!

Number of Servings: 4

Ingredients

    2 pounds new yellow potatoes
    3 sprigs thyme
    3 cloves garlic, whole, peeled, bruised
    2 bay leaves
    2 tablespoon salt
    2 tablespoon olive oil
    pinch of cayenne (optional)

Directions

Put potatoes, thyme, garlic, bay leaves and salt in a pot with water to cover potatoes. Boil potatoes for 5 minutes and let air dry.

Once dry toss in olive oil and a pinch of salt. Bake at 375 F for 30-35 minutes until golden brown.
