Ingredients

1 1/4 cups of sugar
1/2 cup of applesauce
2 eggs
1 pint of low fat buttermilk
1 cup of Kelloggs 100% Bran Buds Cereal
1 cup of boiling water
2 cups of All Bran Cereal
3 cups of flour
2 1/2 teaspoons of baking soda
1 teaspoon of salt
1 tsp cinnamon
1/2 tsp nutmet
Directions
Preheat oven to 375 degrees
1st: Poor 1 cup of Kellogs 100% Bran Buds cereal in bowl and add 1 cup of boiling water. Set aside for the bran cereal to soften and absorb the water
2nd: Cream sugar, applesauce & eggs in large mixing bowl
3rd: Add buttermilk to creamed mixture above and mix well
4th: Add 2 cups of All Bran Cereal to mixture and blend well
5th: In separate bowl, mix flour, baking soda, salt, cinnamon & nutmeg until well blended
6th: Add flour mixture one cup at a time to above mixture. Blend well
7th: Add moistened 100% Bran Buds cereal to mixture and blend well. It will be thick
8th: Place cupcake / muffin liners to muffin tins. Spray with Pam to keep from sticking.
9th: Fill muffin tin about 2/3's full
10th: Bake on 375 degrees for 13 to 16 minutes, depending on your oven. The muffins should be soft to touch, so check your muffin @ 13 minutes to see if they are cooked all the way through. Stick a toothpick or other object in center of muffin to see if done.
11th: Let muffins cool for 10 minutes and enjoy.
Muffins can be frozen up to 2 months.
