Ingredients

    1/4 C kale, shredded
    1/4 C spinach, chopped or baby
    1/4 C red cabbage, shredded
    1/4 C quinoa
    1/3 C kim chee or zing salad from Rejuvenative Foods
    1/4 C sprouts (clover, alfalfa, sunflower, or whatever you like)
    1/4 C shredded carrot
    2 T chopped teriyaki almonds

Directions

Cook quinoa in 3/4 C water about 20 minutes or until tender. Place the greens in the bottom of a large bowl, then the quinoa, then the kim chee or zing salad (I like to mix some of each), then the sprouts and carrots, then top with the almonds. Other vegetables or grains may be substituted.

For a completely raw dish, use raw "rice" made from chopping daikon or parsnips in a food processor.

Makes one serving.
