Lemon Shrimp Pasta Salad

Introduction

Number of Servings: 12

Ingredients

    16 oz mini penne pasta
    1 cup mayonnaise
    2 tsp lemon zest (peel)
    2 tbsp fresh lemon juice
    1/2 tsp lemon pepper (or black pepper)
    1 cup chopped tomatoes
    1/2 cup finely shopped green onions
    16 oz cooked & peeled shrimp - thawed if necessary

Directions

cook pasta according to directions, drain and rinse with cold water.

In a large mixing bowl, mix together the mayonnaise, zest (peel), juice and lemon pepper (black pepper) Stir well. Add the tomatoes and green onions. Stir well and set aside.

When pasta is ready, add it and shrimp to large bowl. Toss to mix well. Let stand at room temp for 15 minutes to let flavors blend and develop, then serve. It does not HAVE to stand if in a rush. Feeds 8 main servings or 12 - 16 as a side dish.
