Shrimp (Or chicken or fish) Ala Greque

Introduction

Flavorful ingredients are combined with tomatoes, shrimp (or chicken/fish and (optional feta cheese) to make a dish that is good for serving a crowd because it is easily multiplied. Chunks of firm fish can be substituted for the shrimp or added to the shrimp for variety. Another option is to use chunks of boneless skinless chicken breasts in lieu of shrimp/fish.

****Nutritional data is based on shrimp but does NOT include feta cheese. Add it to your nutrition tracker separately if you add it to the recipe. The feta is good but not that noticeable if you leave it out. If you want to include it, you can just sprinkle a little on top when serving and add to your nutrition tracker.

Ingredients

    Shrimp ala Grecque

    INGREDIENTS:
    1/2 cup olive oil
    2 cloves garlic, crushed
    1 large onion, sliced thin
    2/3 cup dry wine
    6 large tomatoes (or three large cans diced tomatoes w/juice)
    1/4 cup chopped Italian (Flat leaf) parsley
    1 tsp chopped fresh oregano (or 1/2 tsp dried oregano)
    1 tsp salt
    1/2 tsp ground pepper
    sprigs of parsley (for garnish)
    2 pounds shelled, de-veined shrimp

    Optional:
    or diced chicken breast
    1/2 pound feta cheese

Directions

Makes 9 ea 2 Cup servings (with shrimp, and without feta)

Sautee onion and garlic in olive oil in large pot on stove. When onions are translucent, add tomatoes, wine and herbs & spices. Let simmer 30 minutes or until mixture has thickened.

Add shrimp (or chicken or fish as desired for protein). Cook until meat or fish is done and serve.
Some serve over brown rice but good without. (Not included in calculations)

You can freeze in individual 1 1/2 C servings and add shrimp or chicken and optional Feta cheese when you warm it up to eat it. You can also add the chicken when preparing the recipe and then freeze it, but the shrimp will get tough unless you add it at the last minute.

Another option:
In a shallow oven proof casserole, sauté the onion, olive oil and garlic until the onions are translucent
Add wine, tomatoes, herbs and seasonings.
Simmer for about 30 minutes or until mixture has thickened.
Add shrimp and stir to coat thoroughly.
Crumble feta cheese over top of casserole.
Preheat oven to 415 degrees
Bake for about 15 minutes or until shrimp is cooked and cheese has melted.
Garnish with sprigs of parsley

Best prepared a day ahead up to simmering, refrigerated overnight. Tastes excellent when allowed to sit overnight.

Preheat on stove, then mix in shrimp (and/or fish) add cheese and bake for 15 minutes or until shrimp and fish are done. Cheese will be brown on top.
