1 cup uncooked brown rice
1 (15 oz) can black beans
1 tablespoon creole seasoning
4 bell peppers, topped and seeded
1 cup mozzarella cheese, shredded
1 lb. lean ground beef
1/2 cup chopped onion
2. In saucepan bring 2 cups water to boil. Add rice and stir. Reduce heat and simmer for 30 minutes.
3. Saute onion and brown ground beef. Stir in rice and beans. Simmer off liquid.
4. Spoon meat mixture int peppers, layer with cheese till each pepper is full.
5 Bake in oven until peppers are tender, about 45 minutes.
