Patch Lentil Veggie Soup

Introduction

Just a simple veggie soup made with what was in the house. Just a simple veggie soup made with what was in the house.
Number of Servings: 6

Ingredients

    1 quart jar canned lentils and split peas (or use about 1/3 cup each dried split peas and lentils)
    2 cloves minced garlic
    3 cups water (more if you used dried beans or want it more soupy)
    1/2 cup grated carrot
    2 tsp organic vegetable base
    1/2 cup green pepper strips (you can mince or chop if you like)
    1/4 cup pearled barley, uncooked
    1/2 cup chopped tomato
    2 tbsp oil

Directions

Sautee carrot, garlic, tomato and green pepper on med heat. Add rest of ingredients and cook on medium heat 40 minutes. Add more water if it gets too thick or you'd like it more soupy. Good with brown rice or johnny cake.
