Introduction

This is a cornbread recipe that uses no sugar or wheat flour. Baked in a bread loaf pan, 1/4 of the loaf is considered a serving at the Patch. This is a cornbread recipe that uses no sugar or wheat flour. Baked in a bread loaf pan, 1/4 of the loaf is considered a serving at the Patch.

Ingredients

    1 cup cornmeal
    .75 tsp salt
    1/2 tsp baking soda
    .80 cup goats milk (or substitute buttermilk and don't add vinegar)
    .20 cup white vinegar
    1 egg
    1 tbsp butter

Directions

Add vinegar to goat's milk and let set while you gather the rest of your items. This is our substitute for buttermilk.
Add the rest of the ingredients, then add your milk mixture. Mix well and pour into greased/oiled bread loaf pan. Bake at 400 for 30 minutes.
-Doubled, this recipe works well in an 8"x10" pan.
