Salmon Salad made with cottage cheese

Introduction

Number of Servings: 8

Ingredients

    1 lb salmon (fresh or tinned-if tinned add crushed bones)
    1 cup low fat cottage cheese
    1/2 cup onion chopped
    1/4 cup pickle relish
    1TBS light mayonaise
    2 tsp dijon mustard
    1/4 tsp salt
    1/4 tsp lemon pepper or Mrs. Dash lemon pepper seasoning

Directions

Makes eight 1/2 cup servings
Drain the salmon well if using tinned. You want it as dry as possible.
I remove the skin. If using tinned salmon, crush the bones and add to the salmon. Chop the onion finely and add to salmon.
Put cottage cheese in a food processor until smooth. Add light mayo and mustard to the cottage cheese and blend. Add this to the salmon, along with the pickle relish and salt and lemon pepper.
