Quinoa w/ Zuchinni & Corn

Introduction

Number of Servings: 8

Ingredients

    1 Cup dry Quinoa
    2 cups diced zuchinni
    1.5 cups frozen corn
    1 cup crumbled feta cheese
    1/2 cup diced red onion
    1 diced garlic clove
    1 Tblsp. olive oil

Directions

Boil quinoa in 2 cups of water for 12 minutes. Let sit for 15 minutes. Fluff with a fork and add to veggie mixture.
While quinoa is cooking make veggie mixture by sauteing onion and garlic in olive oil for 5 minutes. Add zuchinni and corn and saute for 10-15 minutes until zuchinni is soft. Add quinoa and mix. Transfer to serving dish and sprinkle feta cheese on top.
